Ingredients

  • 1 cup soya chunks
  • ¼ cup sweet corn kernels
  • ¼ cup onion, finely chopped
  • 1 tbsp turmeric powder, divided
  • ½ tsp chilli powder
  • ½ tsp garam masala powder
  • ½ tsp pepper powder
  • 1 tbsp salt, divided
  • 2 tbsp oil or butter, for shallow frying
  • Wheat flour, as required

Method

  1. Bring some water to a boil in a bowl or saucepan. Add ½ tablespoon salt and ½ tablespoon turmeric powder to the hot water.
  2. Add the soya chunks, cover with a lid and let them soak for 10 minutes, or until soft.
  3. Drain the water completely and gently squeeze out any excess moisture from the softened soya chunks.
  4. Transfer the soya chunks to a mixer jar and pulse briefly to obtain a coarse texture.
  5. In a mixing bowl, combine the coarsely ground soya, chopped onions and sweet corn kernels.
  6. Add the remaining turmeric powder, chilli powder, garam masala powder, pepper powder and salt. Mix well.
  7. Shape the mixture into small round or oval cutlets. If the mixture feels too soft or loose, add a little wheat flour to achieve a firm consistency.
  8. Heat oil or butter in a pan over medium heat. Place the cutlets on the pan and shallow-fry for 3-4 minutes on each side, or until golden brown and crisp.
  9. Remove and drain on kitchen paper.
